I am thinking about getting steel rims and can't decide between 7 or 8 inch rim.

I am running 265/75 tyres.

I have worked out offset differance and all that, but I've heard the bead can break when running low pressure on 8 inch rim. I notice many on here have 265/75 on an 8 inch rim, so my question is has anyone had problems with the bead separating when running low pressure say 20 psi or less?

nah should be pretty right - biggest factor, making sure the rim hasnt had any big hits and is still round and true + a good quality tyre with a strong sidewall helps.

I've had my 265/75/16 on a 8' rim get down to 8psi no problems

A 265 tyre has a recommended rim width of 7.5 inches so an 8 inch rim is no problem, in fact you could go all the way to a 235 on an 8 inch, 8 inches is 203.20 mm which is still narrower than 235 mm obviously.
